November//Family//Two Months

At two months old Kai likes the sound of water and lots of snuggles. He doesn't like his bassinet, swing, or anything else that isn't mama's arms and could eat forever. And oh those smiles, could melt anyones heart. I had forgotten how hard these first few months can be but he is a keeper and is as sweet as sweet can be.

Kai River Hoffart, born October 2, 2012 at 7:12am. Weight 8 Ibs 12 oz, height 21 inches. We are still amazed how precious he is.

Really late in posting these pictures but this is back in Mexico when I was six months along. My due date is fast approaching now and I will always cherish these pictures of my two boys.

June // Recipe // Southwestern Coleslaw

In the spirit of our recent Mexico trip here is a recipe for Southwestern Coleslaw from Simply Recipes. It's my go-to coleslaw recipe that is always a hit as are most items that I have made from this website. Enjoy!

the what:

4 cups thinly sliced cabbage (about 1/3 to 1/2 cabbage)

1 carrot, grated

2 radishes, thinly sliced

1 green onion, thinly sliced

1/4 cup (packed) fresh cilantro, chopped

1 Tbsp olive oil

1 Tbsp seasoned rice vinegar (or plain rice vinegar with added sugar to taste)

Salt and freshly ground black pepper to taste

the how:

-Combine cabbage, grated carrot, radish slices, cilantro, onions in a serving bowl. Add the olive oil and toss to coat. Then add the seasoned rice vinegar, and salt and pepper to taste.

Serves 4
